Our 23rd annual Christmas Open House was absolutely fabulous! Every year I think it can't get better - but it usually does. This year we changed up the food a bit. I challenged my aunt and mom to come up with three recipes that only have a few ingredients and are stress free. They did it!
Buckeye Brownies
* 1 box 9 x 13 brownie mix plus ingredients on box
* 2 cups powdered sugar
* 1/2 cup softened butter
* 6 tablespoons softened butter
* 1 cup creamy peanut butter
* 1 cup milk chocolate chips
*In a 9 x 13 pan, make and bake brownie mix according to box instructions. Let cool.
*In a bowl add your powdered sugar, 1/2 cup butter and peanut butter. Mix well. Spread with fingers over the brownies and pat down (it has a consistency similar to playdough).
*Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies second layer. Let cool and enjoy!
____________
Peanut Butter Pan Squares
* 1/2 cup butter, cubed
* 1/2 cup creamy peanut butter
* 1 and 1/2 cups sugar
* 1 cup all-purpose flour
* 2 large eggs, room temperature, lightly beaten
* 1 teaspoon vanilla extract
*In a microwave-safe bowl, melt butter and peanut butter; stir until smooth. Combine sugar and flour; gradually add to butter mixture and mix well. Beat in eggs and vanilla.
*Spread into a greased 9 x 13 baking pan. Bake at 350 degrees until lightly browned and edges start to pull away from sides of pan, 28 to 32 minutes. Cool on a wire rack.
_____________
Nougats
* 2 tablespoons butter
* 2 bags mini marshmallows (250g per bag)
* 2 bags white chocolate chips
* 2 cups gumdrops
*Melt/microwave the butter, marshmallows and white chocolate chips together until smooth. Mix in gumdrops. Spread on parchment paper lined in a 9 x 13 pan. Chill overnight in fridge. Cut into squres.
** Can be stored in freezer

Hints and tips: Use baking gumdrops but could use jujubes also (they wouldn't be as chewy). Can use nuts and cranberries instead of gumdrops. Allow to warm up a bit after taking out of the fridge - they are easier to cut.
